Cabbage is one of the most underrated vegetables, in my opinion.

Cabbage is highly nutritious – Especially when pickled or fermented for sauerkraut or pikliz.

To start, remove the tougher outer leaves of the cabbage.

Ingredients

  • 1 head of cabbage, washed and sliced
  • Carrot (optional, adds color and sweet crunch)
  • 1 small onion, sliced
  • 2 tbsp olive oil
  • Salt to taste
  • cayenne pepper to taste
  • minced garlic or garlic powder to taste
  • pinch of sugar
  • thyme (fresh or dried)

Instructions

  1. Heat the olive oil in a large skillet or frying pan over medium heat. Once hot, add the sliced onion and carrot and sauté for 2-3 minutes until they begin to soften.
  2. Add the sliced cabbage to the skillet. Sprinkle with salt, red pepper flakes, cayenne, garlic, dried thyme, and sugar. Toss everything together using tongs or a large spoon to ensure the cabbage is well coated with the seasonings and olive oil.
  3. Allow the cabbage to cook, stirring occasionally, for about 10-15 minutes. The goal is to achieve a tender texture that retains a bit of crunch. Adjust the heat as necessary to prevent any burning while still encouraging some light caramelization.
  4. Taste the sautéed cabbage and adjust the seasoning with additional salt or spices to your preference. Once you're satisfied with the flavor and texture, remove the pan from the heat.
  5. Serve hot and enjoy!
