As a mom of three, life is never short of opportunities to celebrate. Celebrations call for homemade baked treats in our home, and these fluffy, moist cupcakes are always a hit!

I use this recipe to make birthday cakes and cupcakes throughout the year. This recipe is tasty and straightforward. Best of all, no fancy mixer is needed.

Basic Vanilla Cupcakes Ingredients

These easy vanilla cupcakes come together with simple and readily available ingredients.

Vanilla cupcakes from scratch

Flour, sugar, unsalted butter, baking powder, pure vanilla extract, salt, buttermilk, eggs, and fresh homemade whipped cream (super simple) come together to make the only cupcake recipe you will need.

This recipe uses cake flour, as cake flour is lighter and more delicate than all-purpose flour, producing a better overall cake texture, in my opinion.

How to Make Vanilla Cupcakes

Preheat Oven: Start by preheating your oven to 325°.

Dry Ingredients: Pour cake flour, salt, and baking powder into a bowl and mix thoroughly.

Wet Ingredients: Cream softened butter and sugar together in a separate large bowl. Mix in eggs and vanilla extract. Next, mix in flour and buttermilk, alternating between the two until it’s all combined. Finally, gently fold in the whipping cream using a spatula; at this point, your batter is complete. Do not over-mix the batter.

Cupcake Liners: Fill cupcake liners about 3/4 full with batter. This will leave room for them to rise without creating a muffin top, making a more presentable cupcake for decorating.

Baking Time: Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean. Let stand for 5 minutes, then transfer the cupcakes to a wire rack to cool before frosting.

Decorating: While these cupcakes are tasty enough not to need frosting, I understand that a cupcake without frosting is dull. I frost these cupcakes with my homemade cream cheese frosting, and they are divine.
