If your kids love pancakes, this recipe is the perfect Christmas breakfast. These White Chocolate Mocha pancakes are easy to make, fun to decorate, and oh so delicious.

Best of all, this recipe can be whipped up in no time! I’m purposely sharing a Christmas breakfast that is fail-proof and fast so you’ll have plenty of time to enjoy gifts being ripped open and the wonderful smiles on your kids’ faces on Christmas morning.

Dripping with icing, the over the top presentation of these pancakes will make them a festive focal point of your Christmas breakfast.

My children joke that these are the same pancakes Mrs. Clause makes for Santa on Christmas morning after he finishes delivering presents and toys to little boys and girls all around the world.

Pancake Batter

 If you must have your pancakes made from scratch feel free to make your own pancake batter. Pancake batter typically consists of flour, eggs, sweetener, and a liquid.

Homemade pancake batter is great, but I understand that your time is valuable. No one wants to be stuck in a kitchen all Christmas morning missing out on all the wonderful smiles and laughter with your family as they open their gifts. 

Let’s simplify Christmas morning breakfast. This pancake recipe begins with your favorite time saver store-bought pancake mix.

Pancake Ingredients

Pancake Mix: Keep It Simple! Your favorite store-bought brand of pancake mix will do. I typically like to use a brand of mixture that requires me to just add water. Spoiler Alert! I do not just add water.

Holiday Coffee Creamer: During the holiday season, limited edition creamers are plentiful on store shelves. The holiday creamer is the perfect substitute for water in your pancake mix.

I love gingerbread and sugar cookie flavored pancakes, but my absolute favorite is white chocolate mocha flavored pancakes. 

White Chocolate Christmas Pancake Toppings

This pancake batter is sweet enough that it can be eaten with or without any other sweeteners like syrup or honey.

To stay in the Christmas spirit, however, I top these easy and delicious pancakes with white icing and Christmas colored sprinkles. This is where I allow my kids to a little crazy with toppings.

Christmas only comes around one time a year. It’s not every day that kids get to enjoy such a fun and festive breakfast. Your kids will thank you for taking the extra step of adding icing and more toppings to your breakfast spread.

You will only need a few ingredients to create the icing for these pancakes.

Powder Sugar Drizzle: Powdered Sugar drizzle is simple to make and typically it takes your dish to the next level. You will only need Powdered Sugar and Milk/ Heavy Whipping Cream. 

Sprinkles: Add flair to the recipe and helps create a festive atmosphere.

Can Pancakes be made in advance?

If you are looking for an even easier Christmas morning breakfast idea make these delicious pancakes in advance. 

Once they are made just lay them on parchment paper and place them in the freezer for 15-20 minutes. Remove from the freezer and place pancakes into freezer Ziploc bags. 

When you are ready to enjoy them, simply heat them in the oven or toaster for a delicious breakfast.

White Chocolate Mocha Pancakes

Prep Time: 15 minutes
Cook Time: 20 minutes
Total Time: 35 minutes

  • pancake mix
  • white chocolate coffee creamer
  • confectioner's sugar
  • (optional) sprinkles or other toppings 


    1. In a medium mixing bowl add the desired amount of store-bought pancake mix. ( follow the measurements on the back of the box for best results.) 
    2. Substitute the water or milk for coffee creamer. Add instructed amount of the coffee creamer to the bowl in place of the liquid as described on the pancake mix instructions.
    3. Mix the ingredients in the bowl until they are thoroughly combined.
    4. Heat a non-stick skillet or non-stick griddle on medium-high heat.
    5. Pour a half cup of mixture into skillet or griddle and wait until the edges of the pancake begin to bubble. 
    6. Once the edges of the pancakes begin to bubble flip the pancake and allow them to cook for 2-3 minutes on the opposite side. 
    7. Remove pancakes from the skillet and stack to your desired height. 
    8. In a separate mixing bowl add 1 cup of confection sugar and 2 tablespoons of heavy whipping cream or milk. Mix ingredients in a bowl until they are well combined.
    9. Use a spoon to drizzle the icing over the stack of pancakes. 
    10. (optional) Add toppings of your choice to your pancakes.
